The estate, located at an altitude of 1050 meters above sea level in Varjão de Minas, Minas Gerais, benefits from the unique climatic conditions of the Cerrado Mineiro region. Spanning 650 hectares, the farm is a model of modern coffee cultivation. The combination of altitude, climate, and soil creates an ideal environment for growing Yellow Bourbon variety.
 

The farm’s altitude and rich soil provided an ideal setting for coffee cultivation, but it was Carlos Sérgio’s commitment to post-harvest processing that set Serra do Boné apart. Employing washing and pulping techniques, Carlos Sérgio ensured that every coffee cherry received meticulous attention. The harvest, 100% manual, was (and still is) carefully dried on suspended beds, allowing for optimal moisture control and flavor development.

The processing of Guima Café’s coffee is meticulously managed to enhance its natural qualities. Using the natural processing method, the beans are carefully dried on the suspended patio, ensuring a consistent and high-quality product. This method allows for slower drying with minimal sunlight, imparting unique characteristics to the beans that are not found in other coffees produced on the estate. The farm’s innovative approach and dedication to quality make it a standout producer in the region.

With cupping notes of honey, citric fruits, and floral undertones, this coffee delivers a vibrant and refreshing flavor profile. The sugar cane sweetness and citric acidity are balanced by a creamy body, culminating in a pleasant aftertaste.
